Good Bowls - Huevos Rancheros Estilo Sureño Recipe

At Good Bowls, we share all of our recipes. The Huevos Rancheros Estilo Sureño Bowl is the Mexican classic with the patented Good Bowls Med-South twist. We start with a base of grits and a fried egg and then add some south-of-the-border seasoning to some roasted peppers, onions, and sweet potatoes, mix in some corn and black beans, and finally scoop on some El Capitan plant-based ‘Chorizo’ from our new partners No Evil Foods simmered with a chunky salsa and topped with some shredded cheese.

We love this bowl for a family dinner, breakfast, and of course a late night snack.

 

Huevos Rancheros Estilo Sureño Bowl

The Huevos Rancheros Estilo Sureño - The Good Bowls version of the Mexican icon, packed with seasoned roasted vegetables and mixed with No Evil Foods’ El Capitan plant-based ‘Chorizo’

Preparation:

  1. Put Grits on to Cook – bring 2.25 cups of water to a boil, add ½ tsp of salt, stir in ¾ cup of grits, cover, and turn heat to low. Stir often and add 1tbsp of butter after 5 minutes. 

  2. Dice white onion, green pepper, red pepper, sweet potato; mince garlic and add to large mixing bowl. 

  3. Add pepper, Italian seasoning, chipotle powder, chili powder, paprika, cinnamon, salt, and cumin.

  4. Juice the lime into the mixing bowl using a juicer or reamer. 

  5. Add olive oil to mixing bowl and stir.

  6. Pour vegetable mixture onto a backing pan, evenly spread the vegetables, and bake in the oven at 435º for ~12 minutes until the sweet potatoes are cooked to desired crunch.  After 8 minutes, stir the vegetables and add the corn and black beans to the baking pan. 

  7. Sauté the No Evil chorizo in a skillet until lightly browned and at desired crunchiness. 

  8. Reduce heat to low, stir in salsa, and allow to simmer. 

  9. Cook 4 eggs over medium in a skillet

Assemble:

On a plate, place a bed of grits, add egg on top, scoop roasted vegetables over the egg, add chorizo mix, and top with shredded cheese.  Serve with beer.

½ White Onion – diced – 150 grams
½ green pepper – diced – 90 grams
½ red pepper – diced – 90 grams
½ sweet potato – diced – 90 grams
garlic – 2 cloves – minced – 12 grams
1 whole lime

Olive oil – 1/3 cup for veggies – 1tbsp for chorizo – 1 tbsp for eggs

Pepper ½ tsp
Italian seasoning – ½ tbsp 
Chipotle powder – ½ tbsp.
Chili powder – ½ tbsp.
Paprika - 1tsp
Cinnamon – ½ tsp
Salt – 1/2 tsp in veggies 
Cumin – ½ tbsp

Butter – 1tbsp 
Shredded Extra Sharp Cheddar Cheese – 3oz

No Evil Food plant-based ‘Chorizo’ – 6 oz/ 170 grams 
Yellow Polenta Grits – ¾ cup
Salsa mild chunky – ¾ cup
Black beans - 1/3 cup 
Sweet corn – 1/3 cup
Eggs - 4
