Good Bowls - Wintry Mix Recipe
At Good Bowls, we share all of our recipes. For the true southern vegetable lover, we have the Wintry Mix Bowl. A personal favorite of nutrition professor and Good Bowls founder Alice Ammerman, the Winty Mix Good Bowl is a tasty blend of the southern leafy classics of kale and cabbage mixed in with some roasted sweet potatoes and spiced black beans and served over brown rice with some funky bleu cheese crumbles.
This veggie packed southern classic will be a favorite for the vegetarian Goods Bowls fans looking to use all the leafy greens in their CSA.
Preparation:
Put brown rice on to cook. Add ½ tsp of salt to pot. Add 1.5 tbsp of margarine when rice is done cooking and stir
Cut white onion, red cabbage, white cabbage, garlic, and jalapeño and add 3 tbsp olive oil into large pan and saute.
Add thyme and juice one lime into mixture. Saute until vegetables are soft and reduce to low.
Cut sweet potatoes and red peppers and place in mixing bowl - add olive oil and oregano and mix - place on a baking sheet and bake at 435º for ~12-15 minutes
Blanch Kale
Add roasted vegetables and kale to sauteed vegetable mixture and keep on low heat.
Add bleu cheese and black beans and stir on low heat for ~10 minutes
Serve over brown rice
Ingredients - Serves 4
Small white onion diced
Red Cabbage diced - 7 oz
White Cabbage 6oz
Dino Kale - 4 oz
Garlic - 5 cloves minced
½ Jalapeño minced
½ red pepper cubed
½ sweet potato cubed
Olive Oil - 4 tbsp for roasted vegetables - 3 tbsp for saute
Thyme - 1 tsp
Oregano - 1 tsp
Salt - ½ tsp
Margarine - 1.5 tbsp
Brown Rice - 1 cup dry
1 lime
Bleu Cheese crumble - 4.5 oz
Black beans - 3.5 oz
