Good Bowls - Piedmont Pesto Al Orzo Recipe

Based on the Mediterranean Diet and packed with healthy oils and fresh roasted vegetables, this vegetarian pesto bowl will appeal to all basil lovers soon be a staple at your family’s table.

Preparation:
Cut Cauliflower, broccoli, sweet potato, red pepper, and garlic and add to large mixing bowl.
Add olive oil, salt, pepper, Italian seasoning and juice the lime over vegetable mixture. Mix thoroughly.
Place veggies on a baking sheet and bake at 435 for 12-15 minutes until at desired tenderness.
After 10 minutes, add garbanzo beans and sun dried tomatoes and stir veggie mixture.
Put on Orzo to Cook.
Drain Orzo, place in a bowl, add 3 oz pesto, butter, lemon juice, and crushed walnuts. Stir.
When Veggies are done, place in a mixing bowl and add 3 oz of pesto and stir.
Place portion of orzo in a serving bowl, add veggie mixture and top with a pinch of fresh basil and parmesan cheese.
Ingredients - Serves 4
Cauliflower 1 inch cubes - 2 cups
Broccoli 1 inch florets - 1 cup
½ Sweet Potato diced small - 1.5 cups
¾ Red Pepper diced - ¾ cup
Garlic 3 cloves minced
Garbanzo Beans - ¾ cup
Fresh Basil Chopped - 1 oz
Olive Oil - 1/4 cup
Salt - ½ tsp
Pepper - ½ tsp
Italian Seasoning - ¾ tbsp
Orzo - 1 cup
Crushed Walnuts - 1 oz
1 lime
Diced Sun Dried Tomatoes - ½ cup
Butter 1 tbsp
Pesto - 6 oz
Lemon Juice - 1 tbsp
Shredded Parmesan - 1 oz
